Chard, spinach and turnip greens (cima di rapa) are a highly nutritious group of vegetables that, despite their bad press have a wonderful flavour. In Italy, they are usually prepared simply by blanched to be served with olive oil as part of antipasti di vedura, braised with chilli and garlic, or incorporated into lentil dishes. Spinach has the additional versatility of being very useful as a salad component and teams up very well with ricotta.

"Green cutting chard" is a vigorous, highly productive, bright green variety with narrow stems and, in Australia, is commonly sold as a spinach variety, for which it is a good summer substitute. Use it as for spinach in cooked dishes such as stuffing for pasta, soups, frittate or braised in olive oil. Packet contains 9g for about 450 seeds. Organic seed also available.

"Green, white ribbed chard" is very different to “verde di taglio” in that the stems are broad and white and contrast with the intense green of the leaf, making this vegetable a "two in one".
