This chicory finishes its growing in the absence of light and as a consiquence lacks strong colouration. The two stage process involves growing the plant normally to mature in winter when the head is removed. The root is lifted and transplanted into a cellar or other dark place where the white shoots grow from the cut top of the root. Used as a salad and valued for it's mild flavour and crunchy texture. 10 gram packet.
